Tom yum Seafood

INGREDIENTS

  • 4 cups of water

  • seafood of your choice: shrimps, mussels, scallops, crab, squids or sliced fish fillet.

  • 3 stalks sliced lemongrass

  • Nam Prik Pao chilli sauce

  • 4 kaffir lime leaves

  • 3 cloves garlic

  • ½ cup of sliced galangal

  • 3-4 sliced red chilies OR 1-2 Tbsp

  • 1 cup of fresh mushrooms, sliced thinly

  • 1 cup of small tomatoes(cut into half)

  • 2 Tbsp. fish sauce

  • 2 Tbsp.juice of 1 lime

  • 1 tsp. sugar

 

PREPARATION

  1. Pour water in a pot ,wait until it’s boiled

  2. Put lemongrass,galangal and lime leaves in a boiling pot

  3. Add garlic, chili, and mushrooms.

  4. Close the lid, wait until mushrooms are soften.

  5. Add the seafood you're using, and tomatoes .Simmer over medium heat 3-4 minutes, or until shrimp turns pink and plump and mussels have opened. Scallops, crab, and fish should all be firm to the touch and no longer translucent.

  6. Add chilli sauce, fish sauce, lime juice, and sugar. Stir well to combine and gently simmer until hot . Taste-test the soup for salt and spice, adding more fish sauce ,sugar ,lime juice or more chili as desired.

  7. Serve in bowls and enjoy!!
